“When I was a kid my aunt and uncle used to make baklava for the holidays all the time. It became one of my favorite desserts. Not too sweet. A lot of nuts. I found these really amazing nectarines at the Farmers Market. I wanted to incorporate them into the dish but in my own way. They had the right amount of sweetness and tartness to complement the nuts of the baklava. Essentially, it’s a childhood memory I put on plate and reworked it with ingredients I love.” — Redbird Pastry Chef, Jashmine Corpuz

Cardamom Pastry Cream

1C Milk
2.5TB Sugar
1/2 Vanilla Bean
1tsp Ground Cardamom
3TB Cornstarch
2.5TB Sugar
4ea Yolks
2TB Butter

1. On medium flame, heat the milk with the vanilla bean, cardamom, and first amount of sugar.
2. Whip the Yolks with the second amount of sugar and cornstarch until light in color.
3. Bring the milk to a scald.
4. Whisk about half of the hot milk mixture over the yolks and stir to incorporate.
5. Pour this mixture back into the pot of milk and stir until emulsified.
6. Whisk over medium heat until mixture bubbles slightly, which will activate the cornstarch.
7. Take the pot off of the heat and whisk in the butter.
8. Pour mixture into a flat pan, spread it out with a spatula and cover it with plastic wrap directly on the surface so as not to form a skin.
9. Let it chill over ice until cool. Store it in the fridge until ready to use.

Stu and the Kids at Vibiana

Vibiana was honored to host the recent Stu and The Kids event, where many of LA’s best known chefs came together to cook Thai-inspired dishes.  All proceeds from the event go directly to the kids’ education, funding school uniforms, books, supplies, housing, food and tuition for higher education.

Vibiana Preferred Planner Guest Blog: Amber Events & The Modern Bride Part II

Part two is here!

In part one of this collaboration between Vibiana and Amber Events, we loosely described the modern bride and some of the aspects that make her unique. She’s trendy, but will also pay homage to her (and her groom’s) family traditions or cultural customs. She often has a distinct vision for her wedding day, which makes for a challenging planning period, too. In the end, the efforts from all parties involved prove to be worth it.

One of the challenges in planning for a modern bride is uniting all chosen vendors. Amber Events prides itself on its long-developed network of vendors—a select number of teams that have demonstrated to do their job really, really well. Upon meeting with a future bride, she sometimes chooses a business or company from her personal network. For example, a friend may offer to take wedding photos. What’s unforeseen are the work dynamics between vendors in new relationships. In this case, it’s so important to be open-minded to differences in company policies or means of communication.

As mentioned earlier, it is common for engaged couples to incorporate culture into their wedding day. Take Marsha and Tolu’s Vibiana wedding from 2014—the couple looked so handsome in a white gown and black tux during the ceremony. And at the reception, the party came to life with traditional Nigerian garments in metallic silver and golden yellow!

After a night of partying, a midnight snack sure sounds appetizing, doesn’t it? Danielle Fishel (yes, Topanga!) and her husband, Tim Belusko, surprised their guests with an In-N-Out truck towards the end of the night. What a fun idea it was to include something so California, and also to contrast the glamorous and sexy aesthetic of the reception.
